Treat your family to a fun and festive Easter celebration with delicious homemade Easter cupcakes. These easy-to-make cupcakes are perfect for an Easter brunch or party, and the colourful decorations make them even more special. With a few simple ingredients and some creative decorations, you can whip up these scrumptious Easter treats in no time at all!
Cute Bunny Easter Cupcakes
This fun cupcake recipe makes 12 cupcakes. Prep time is only 40 mins and cooking time 25mins. So in just over an hour you can be enjoying an Easter themed treats.
Ingredients:
- 100g pot natural yogurt
- 1 lemon, zested
- 2 eggs
- 250g pack fondant icing
- 185g self-raising flour 120g golden caster sugar
- 120g butter, softened
For the frosting:
- 85g unsalted butter, softened
- few drops vanilla extract
- 200g icing sugar
- Few drops green food colouring
Method
Step 1
- Heat your oven to 190C/170 fan/gas 5 and line a 12-hole bun tin with paper cases. Put the flour, sugar, butter, yogurt, lemon zest and eggs in a bowl and mix with electric beaters until smooth. Then, spoon a large tablespoon of the mixture into each of the cases, making them as even as possible. Bake for 20-25 mins until the cakes are risen and golden, and a skewer poked into the centre of one comes out clean. Finally, set aside to cool on a wire rack.
Step 2
- For the frosting, beat the butter, vanilla extract and icing sugar until the mixture is pale and creamy, and completely combined. Add a few drops of green colouring and beat it in. If piping, scoop the frosting into a piping bag fitted with a star nozzle, then pipe stars of green icing all over the tops of the cakes like tufts of grass. If not piping, spread the icing over the cakes and run a fork across to make it resemble grass.
Step 3
- Roll the fondant icing into small balls no bigger than a walnut (these are the bunnies’ bottoms). Roll smaller balls to make tails and stick them on top of the bigger balls. Put one rabbit on each cake. Now make the feet by rolling two more small balls for each bunny and shape them into ovals. Rest these at one end of the ball so they look like feet.

Cadbury Mini Egg Nest Cupcakes
A lovely cupcake idea for Easter and perfect for those with an extra sweet tooth, mini egg topped cupcakes are a real Easter treat.
Ingredients:
For the cupcakes:
- 1 and 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- 1/2 cup whole milk, at room temperature
- 1 teaspoon vanilla extract
- 1 cup Cadbury Milk Chocolate Mini Eggs
For the frosting:
- 1/2 cup unsalted butter, at room temperature
- 2 cups powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
- Cadbury Mini Eggs, for decoration
Method:
Step 1
- Preheat your oven to 350°F (180°C). Line a cupcake pan with cupcake liners. Then, in a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In a large mixing bowl, cream the butter and sugar together until light and fluffy. Finally, add the eggs one at a time, mixing well after each addition.
Step 2
- Mix in the dry ingredients in three additions, alternating with the milk and vanilla extract. Start and end with the dry ingredients. Mix until just combined. Fold in the chopped Cadbury Mini Eggs. Next, spoon the batter into the cupcake liners, filling each about 3/4 full. You will need to bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let cool completely on a wire rack.
Step 3
- For the frosting, cream the butter in a large mixing bowl until light and fluffy. Add the powdered sugar, heavy cream, vanilla extract, and salt. Mix until smooth and creamy. Next, pipe or spread the frosting onto the cooled cupcakes. Top each cupcake with a few Cadbury Mini Eggs for decoration.

Marshmallow Sheep Easter Cupcakes
Easter marshmallow sheep cupcakes are an adorable and fun dessert that can be enjoyed by both kids and adults during the Easter season. In this recipe we’ve made your baking session even easier by including some pre made cake making products.
Ingredients:
For the vanilla cupcakes:
- 1 and 3/4 cups all-purpose flour

- 1/2 cup unsalted butter, at room temperature

For the sheep cupcake topping:
- White mini marshmallows
- 1 400g tub of White or Vanilla Icing or buttercream
- Set of sheep edible sugarcraft cake toppers. These ones from Amazon are perfect!

- To easily complete your marshmallow sheep cupcake topping use a baking spatula add the icing or buttercream to each cupcakes. Next, cover the entire top of the cupcake with mini marshmallows. This will make the sheep fur. Now for the finishing touch. Decorate each cupcake with a cute black sheep face cake topper.
