Easter Recipe: Yummy Flake Mug Cakes
I've had a bit of a revelation this week when it comes to cooking with kids. Hands down- the easiest thing to cook with little people is: Microwave Mug Cakes.
This revelation arose out of necessity for us, as we're currently camped out with a makeshift kitchen due to the building work going on in our house at the moment. Therefore we don't have a proper oven and are surviving on toast and anything that can be slung in a slow cooker! Despite the kitchen chaos, we were still craving something sweet and homemade and wanted to bake something Easter-ish. The kids were determined that chocolate had to be included and so ‘Easter Flake Mug Cakes’ were born!
Just in case you're not familiar with the humble mug cake- A mug cake is a real homemade cake using all the ingredients you would put in a regular cake, only it takes a fraction of the time and is cooked in a mug in the microwave. There's no need to weigh anything - all the quantities are given in spoonfuls which mean even the littlest kiddos can pretty much make the whole cake themselves! My kids also enjoyed the instant gratification of a microwave cake – they could watch the cake rise up in the microwave right before their very eyes!
Now, they're not going to win any beauty contests, they're not the prettiest of cakes but as long as the kids get the sweet taste of chocolate and cake- they don't seem to mind!
If you'd like to make some of our Flake Mug Cakes for Easter- you will need.....
- 1 Flake
- 2 Tablespoons of Caster Sugar
- 1 Egg
- Some mini eggs for decoration
- 4 heaped tablespoons of plain flour
- 1 Teaspoon of baking powder
- 1 scoop of butter (approx 30g butter)
- 1 Teaspoon of Vanilla Essence
In a mug: melt the butter with half of the chocolate Flake in the microwave for 30 to 40 seconds (900 watts).
Beat the mixture with a fork until smooth, then mix in the egg, sugar, vanilla essence, flour and baking powder.
Cook in the microwave for one minute (in a 900 watt microwave. You may need to adjust for your microwave wattage).
Decorate with the rest of the Flake to make a nest and top with mini eggs and voila! You have your very own mug cake.
Best enjoyed straight away, whilst still warm from the mug!
